Brown Butter Chocolate Chip Toffee Cookies
These are super yummy! You can add a little Teddy Graham of your choice on top or omit! They are delicious either way!
Ingredients:
- 1 cup unsalted butter (2 sticks)
- 2 ½ cups flour (I use Bob’s organic unbleached or you can use Bob’s GF 1:1!)
- 1 tsp baking soda
- 1 tsp salt
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 egg + 2 egg yolks, room temperature
- 1 tbsp vanilla extract
- 1 cup mini Chocolate Chips
- ¾ cup toffee chips
- 24 Teddy Grahams, optional
How to Make:
- Preheat oven to 350° F
- Brown the butter first. Add butter to small saucepan over medium-low heat. After melting, stir constantly. Continue until it foams/bubbles, has a caramely smell, turns a light amber and has brown little bits forming. Remove from heat and transfer for a bowl to cool completely.
- In a separate bowl, whisk flour, baking soda, and salt until combined and set aside.
- In a stand mixer with paddle attachement, beat the cooled brown butter, brown sugar, and granulated sugar for 2-3 minutes, until smooth/fluffy. Add in the egg, yolks, and vanilla extract and continue mixing for 1 minute.
- Slowly add in the dry ingredients to the wet and beat on low speed until combined. Do not overmix!
- Fold in the chocolate chips and toffee bits.
- Make 1.5-2” size dough balls (or use a cookie scoop) and gently press the Teddy Graham in the center (or leave out!)
- Bake for about 11-12 minutes or until lightly browned on the edges. Remove and cool completely.
