Steak and Arugula Salads

This easy recipe is not only super quick for busy evenings, but also healthy and filling! It has so much flavor and I know you guys will love it! I eyeball the dressing (it’s hard to mess up) and adjust to taste but here are my general “eyeball” measurements!

Ingredients:
– New York Strip (or any steak, trimming the fat)
Am Niccoli Signature Salt (this combo is SO good on steaks, but you can also use salt + pepper)
– 1 bag of arugula
– ~ 1/4 cup EEVO
– 1 tbsp Dijon mustard
– ~1/2 tsp cracked pepper
– Pinch of salt
– Juice of 1 lemon
– Fresh grated Parmigiano-Reggiano cheese

Directions:
– Season + grill steak (we like rare to medium rare here)
– Let rest, then slice
– Place arugula into a large salad bowl
– Combine EEVO, Dijon, salt, pepper, and lemon into a measuring cup or bowl and whisk until well combined
– Drizzle dressing over arugula and toss to combine
– Place salad servings into bowls, then top with sliced steak and fresh gated Parmigiano-Reggiano

If you try this recipe, let me know how you like it!. Leftovers (dressed arugula) are good in the fridge for up to 1-2 days. This dressing is super light and the arugula holds it’s own very well!
